Bikini Recipe

Yields 10 guests

For the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Premix (makes 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Put every ingredients inside a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Then, take off the stove and leave to reach room temperature completely. Decant into a sealable bottle, close it keeping it chilled, where it will keep for about four weeks.

Preparing the Batch Mix: Pour the specified spirits and syrup into one sizeable container, let it rest for an hour, then strain best through muslin, to ensure it's fully clarified.

When ready to serve: Add 85ml of the premix to a stirring glass packed with ice, and stir lightly for a minute to chill. Strain to a cold coupe glass or equivalent, top with the cranberries and complete it using a brief mist of mandarin oil above the glass.
